Executive Pastry Chef

Responsibilities

Manage all day-to-day operations of all sections in the Pastry kitchen.
Work closely with the Executive Chef to ensure that the dessert offerings complement the overall menu and meet the expectations of the customers.
Knowledge of a wide variety of preparations such as cakes, tarts, gateau, chocolate work, decorative work, bakery items, breads, etc.
Create unique and delicious pastries and desserts for buffet, events and a la carte dishes.
Constantly develop, design, or create new ideas and items for the hotel food operations.
Manage baking staff and coordinate kitchen activities to ensure high quality production.
Train, motivate and guide team members to improve their techniques and skills.
Ensure compliance with food hygiene and Health and Safety standards.
Order supplies and manage inventory to optimize stock efficiency and maintain food cost control.
Able to recognize superior quality products, presentations, and flavours.
Prepare recipes, plan menus and collaborate with kitchen staff to ensure consistent high quality standards.
Supervise and coordinate all pastry and dessert preparation and presentation.
Must possess a positive professional attitude and the ability to work with co-workers efficiently and effectively
Ensure Culinary standards and responsibilities are met by the Pastry Team.

Requirements

Minimum 10 years work experience in related positions with at least 5 years of supervisory experience leading a pastry team in luxury hotel / top-tier restaurant.
Certificate in professional catering training course or related discipline.
Experience of managing kitchen staff and delegating tasks.
Expert knowledge of different types of pastry, dessert, cake decorating and bakery.
Possess a professional disposition with good communication and positive interpersonal skills.
Always embrace attention to detail and high standards.
International Exposure is an advantage.
